Where is your favourite place in the U.K and why?
‘I feel so lucky to have a 'product' that I don't have to sell. The UK and Ireland sells itself; all I have to do is keep finding new and interesting things and places for our clients to do and explore. The diverse topography and geography of such a small set of islands is probably unique throughout the world. From the north Cornish coast and the wilds of Exmoor, to the wolds of Oxfordshire and the Dales of Yorkshire, the Lake District, the Scottish Highlands and the Western Isles: this is a sublime little corner of our planet. And throughout the realm, the human imprint has made a lasting mark that, for the most part, has embellished and beautified that landscape and even helped forge a national character and identity.
So, it’s very difficult to chose a favourite place. Perversely, however, I love places where few of our clients venture (not for want to trying to persuade them), like Suffolk, arguably one of the most beautiful counties in the country, where time seems to have stopped In 1936. But perhaps my heart truly lies In the South Downs, which was part of my childhood. It is one of Britain's beautiful 'breathing spaces' and only an hour from London.’
What kind of enquiry would make you excited to get out of bed on a Monday morning?
‘Obviously, everyone loves the big budget trips, where you can let your imagination run wild and offer clients the earth. But I prefer the truly discerning client, who has knowledge and an insatiable curiosity, who wants to be educated and intellectually stimulated. They might have a special interest, like medieval weaponry, or a genuine desire to understand a culture through the eyes of local people. It’s a privilege for us to be able to sate their curiosity and desire by opening doors and introducing them to people from all walks of life, who by giving them a glimpse into their world, offer clients a greater understanding of our culture and way of life.’
What three foods should everyone try when they visit the U.K?
‘I remember attending the Queen's Birthday celebrations at a far-flung British Embassy once upon a time where they served Britain's 3 national dishes: fish and chips; bangers and mash; and Chicken Tikka Masala. And while we have today indubitably become an established foodie nation (there are now 222 Michelin starred restaurants in the UK and Ireland), it has been by adopting and adapting food culture from elsewhere, albeit using the best British and Irish produce. But I am a great believer of 'going local' when you travel - and seeing a culture through Its food is part of that. So eat jellied eels in the East End, Stargazy Pie in Cornwall; Bara Brith in Wales, a Fat Rascal in Harrogate, Crubeens and Champ in Ireland, Smokies in Arbroath, and yes, even a deep fried Mars Bar in Glasgow!’
